High Energy Granola Bars with Hemp Seed & Maple Syrup

This beautiful recipe is fresh from the Wild Food Cafe kitchen. If you come by to the cafe today, you can still get them and try them! Easy to make a big batch at home – just keep in an airtight container and pop one or two in your bag before leaving the house. It really works a treat.

High Energy Granola Bars with Hemp Seed & Maple Syrup

Ingredients

(makes 4 x 60g bars)

20g walnuts

20g goji berries

20g almonds

20g cashew nuts

20g pumpkin seeds

20g sunflower seeds

5-6 TBLS maple syrup

pinch of cinnamon

60g pitted dates

60g hulled hemp seed

pinch of salt

1-2 tsp orange peel

Method

Soak nuts and seeds overnight (apart from hemp). Drain the soak water. In a mixing bowl, mix with maple syrup and cinnamon and spread on Teflex sheets. Dehydrate for 12h-16h on 42C or till completely dry. Alternatively, roast in the oven till dry.

In a food processor or Vitamix (dry blade) blend dates and hemp seeds with orange peel (you might need to use a bit of water for the right doughy consistency). Mix your granola with hemp and date ‘dough’. Shape into bars and serve. Top tip: if you freeze your bars you will get a lovely fudge-like consistency!
