Pink Watermelon Smoothie Bowl
We love watermelon. In fact, from May onwards, we get big juicy melons every week, keep them in the fridge and use them as a super hydrating, refreshing base for all our smoothies. It is easy to transform watermelon from refreshing watery snack to a substantial and nourishing yet still hydrating meal. Our top tip is to blend the watermelon with a seed and dried berry of your choice. The watermelon flavour is absolutely lovely in a creamy smoothie, like the one below. (And the gorgeous pink colour is a bonus!)
Ingredients
1 organic watermelon (approx. 4 cups of cubes)
4 TBLS hulled hemp seeds
2 TBLS of goji berries
2 TBLS of mulberries
1/2 tsp Camu Camu or acerola cherry (alternatively use the juice of 1/4 of lemon or lime)
1 cup of ice
1 TBLS of cold press oil of your choice
Method:
Blend watermelon (seeds and rind is ok to blend as long as you have organic watermelon AND a high-speed blender) with the hemp seeds, dried berries, and superfood powder or citrus juice, add extra ice if necessary to maintain a cool temperature. When blending with watermelon seeds and rind make sure that you blend long enough to reach a smooth consistency. Add the oil last. Serve immediately with your choice of fruity or berry toppings.
