Super Simple Chia, Raw Cacao & Banana Breakfast Pudding
Who doesn’t like eating cake for breakfast? Or cookies, chocolate, pudding..ice-cream… Anything naughty and sweet 🙂
One of the massive perks of learning to play with healthy, wholesome raw plant-based ingredients is that you can throw yourself a naughty feast every morning, lunchtime, and evening and feel amazing about it!
We reckon that is one of the reasons raw and plant-food cuisine is taking the world by storm.
Super Simple Chia, Raw Cacao & Banana Breakfast Pudding
Ingredients
(serves 2)
2 TBLS chia seed, presoaked
4-5 soft dates, pitted
2-3 TBLS raw cacao powder
1 TBLS coconut oil
2 ripe bananas
1/2 cup of coconut milk (either homemade or from a carton)
1/5 tsp vanilla powder or seeds from 1 vanilla pod
pinch of salt
Method
Soak chia seeds in just enough water to cover the seeds for 10-15 minutes or overnight in the fridge. In a blender add pitted dates, coconut oil, and coconut milk and blend till you get a smooth cream. Add the rest of the ingredients and blend again. Serve topped with banana or any other amazing stuff you find at home such as berries – dried or fresh – fruit, coconut, nuts, or seeds. A quick tip: If you like the texture of whole chia seeds do not blend them with the rest of the ingredients – just mix them in at the end.
