The starting point is to use delicious, biodiverse, creative and sometimes unusual plant ingredients.

This includes wild and wonderful minerally-dense seaweed, fresh coconut flesh, wild greens, high-quality fatty olives and easily-digestable sauces of plant protein such as seeds, algae and flower pollen.

I love to create innovative, delicious modern dishes that are more harmonious to our bodies and to the planet.

From my experience most of the adults I meet are crazy about pancakes.

They bring back sweet childhood memories of the ultimate comfort food made with love, drowned in maple syrup and sprinkled with chocolate buttons.

You can’t argue with that.
