Wild Guacamole with Almond & Pumpkin Un-Toast

What do you do when you want a quick & healthy snack?

You make a guacamole un-toast:)

Avocado is one of the most versatile, most loved, natural, nutritious and delicious foods out there. Finding a super ripe and ready avocado full of flavour is like winning a mini-lottery. That’s how we feel:)

It is one of the ‘cleanest’ foods out there – in terms of pesticides and agricultural sprays – so it is fairly safe to eat them even if they are not organic. Another win!

Apart from that, avocado is filling, nourishing, full of healthy fats, gives you plenty of slow-burn energy for your body and mind, and…. we reckon it is good for your soul too!

So here’s our quick and easy (super yummy) guacamole recipe enriched with some extra nutrient-rich ingredients making it a delicious power-snack. We serve it with one of our favourite ‘un-toasts’ – raw crackers or bread – that go just so well with creamy textures of guacamole. Recipe below. Be sure to make these well in advance and store in an air-tight jar/box for up to three months. Winner!

Wild Guacamole

(serves 2)


2 super ripe amazing avocadoes

1 large and ripe heirloom tomato (if in season)

2 spring onions

3-4 TBLS pine nuts

juice of 1 lemon

pinch of Fleur de sel or another natural unprocessed salt

1-2 TBLS extra virgin olive oil

optional ingredients: 1-2 strands of thyme; 1-2 strands of saffron; 1/4 tsp dried lavender flowers; 1-2 TBLS raw cacao nibs


Using a ceramic knife finely chop the avocados, tomato and spring onion. Add lemon juice, pine nuts, olive oil or salt. Mush the guacamole with a wooden spoon or leave it ‘rough’.

Almond & Pumpkin Raw Crackers (Un-Toast)


2 cups of almonds

4 cups blended butternut puree

1/2 cup ground flax seed

2 stalks of basil

2 stalks fresh oregano/ 1 TBLS dried oregano

1 tsp salt


Blend almonds until fine, then add all the other ingredients and blend until well combined. Spread the mixture onto a teflex sheet and shape into a round pizza shape. Dehydrate for 12 hours and then flip over and dehydrate for a further 12 hours until your cracker/un-toast is completely dry. Store in an air-tight container.
